Layering up
The Skinny: An ambitious new entry on the Wynwood scene, Shiso is a smokehouse meets izakaya from chef Raheem Sealey, known for his work at KYU and cult-favorite BBQ pop-up, the Drinking Pig. This is Sealey’s most personal project yet, a mashup of Caribbean flavors, Asian techniques, and wood-fired everything sprawled across an 11,000-square-foot industrial oasis.
The Vibe: Part secret garden, part art gallery. Up a darkened stairwell, the covered outdoor terrace features low-slung lounges, lots of foliage, and a massive bar with urban views. The leafy, graffiti-chic motif continues inside, where you’ll find another bar and a buzzing open kitchen that sends rich, smoky aromas into the loft-like space. It’s a great spot for festive group occasions, date nights, or just hanging out at the bar.
The Food: Chef Sealey draws on his St. Croix roots, fine-dining background, and love of American barbecue to create unexpected dishes full of bold, layered flavors. There’s braised oxtail udon in jus, decadent miso cornbread topped with uni and ikura, and build-your-own smoked short rib temaki served with nori, sushi rice, BBQ sauce, and pickles.
The Drink: Led by James MacInnes (KYU, Klaw), the cocktail program features distinct menus for the two bars. Outside, drinks are unfussy classics. Inside, the menu shows off MacInnes’s global sensibility and gift for presentation. Highlights include the Sin Sombrero, a bright, complex highball with grapefruit and gochujang; the Vetus Negroni, softened with chamomile and plum; and the Kohi Cobbler, a dessert-like blend of coffee-cask rum, Japanese vermouth, and citrus.
The Verdict: Wynwood is quickly becoming oversaturated with high-end dining options, but there’s still room for Shiso’s balance of elevated and laid-back in the transforming arts district. Time will tell if this highly creative and approachable offering from a powerhouse Miami chef can sustain the massive space. –Falyn Wood
