It’s Thursday morning. What’s the scene at your workplace?
Hospitality moves to a different rhythm. At Four Seasons Hotel Miami, the building never really sleeps. My mornings usually start slowly — with an espresso and a moment to reset — before stepping into service mode. By the time I arrive, the hotel is already alive. Guests are moving through the lobby, restaurants are transitioning between services, and the team is preparing for the evening experience.

As beverage director at Séptimo, which opened in April, my work lies between creativity, leadership, and operations. Thursday starts with walking the room, connecting with the team, tasting ingredients, reviewing reservations, and making sure everything’s ready before the first cocktail is served.

What’s on the agenda for today?
My focus is on building something with permanence. Openings are exciting, but the real challenge starts after that. My work today is less about creating drinks and more about creating culture, systems, and experiences people want to come back to. That means refining service rituals, developing new ideas with the team, continuously evolving classics, and ensuring every guest interaction feels effortless. I believe the best bars aren’t remembered for one cocktail, but for how they make people feel.

Any bar or restaurant plans today, tonight, this weekend?
Miami has become one of the most exciting hospitality cities in the world and I strongly believe in supporting people who continue to elevate it through great food, drinks and genuine hospitality. A few places I always recommend:

• ViceVersa (intel): Valentino Longo is one of my closest friends and somebody I have enormous respect for, personally and professionally. ViceVersa captures the true aperitivo spirit, with amazing food, thoughtful drinks, incredible attention to detail, and a very clear identity.

• Sweet Liberty: Naren Young has had an extraordinary impact, not only through Sweet Liberty, but across hospitality broadly. I’ve always admired his creativity and everything he continues to contribute to the industry. Sweet Liberty remains one of those great Miami institutions and one of my favorite places for late nights.

• Café La Trova (intel): Julio Cabrera is a true maestro and somebody who helped define cocktail culture, not only in Miami, but around the world — a true cantinero. Incredible atmosphere, beautiful energy, great drinks, food, and hospitality.

• Bar Kaiju (intel): Derek Stilmann is one of the most talented bartenders in Miami. I always appreciate places that push creativity while maintaining warmth.

• Sunny’s (intel): One of my favorite examples of how atmosphere and hospitality can elevate a dining experience.

• Mandolin Aegean Bistro: Timeless. Mandolin is a place that slows my pace and reminds me why simplicity wins.

Any weekend getaways?
Palm Beach. If I need to disconnect while staying close to Miami, that’s usually my answer. There’s something timeless about Palm Beach. Beautiful pace, understated elegance, and (of course) incredible hospitality. One of my favorite places to stay is (of course) the Four Seasons (intel).

What was your last great vacation?
Italy will always be home. One of my favorite recent trips was returning to Florence and passing time across Tuscany without an agenda.

The tool my husband and I use most for outdoor dining is our forest-green Big Green Egg. The iconic ceramic grill and cooker turns out absurdly juicy meat from live-fire cooking. Over the years, we’ve used it to make everything from Peking duck and baby back ribs to thin-crust pizza and pillowy pita.

We love ours so much that we recently added a MiniMax Big Green Egg to the patio of our apartment. It’s Thursday morning. What’s the scene at your workplace?
By the time Thursday arrives, our office is pretty quiet. For morning fuel, I usually head over to a ventanita at Casa Cuba in South Miami. As we head into a busy weekend, most of our team is deployed at the restaurants supporting operations and ensuring guests have a great hospitality experience.

What’s on the agenda for today?
Our agenda is centered on our corporate team participating in different meetings to ensure everyone is aligned on the priorities for the week. We start with our directors’ meeting focused on operational execution. We discuss opportunities across concepts, talent development, as well as culture and standards. After lunch, we go into our P&L meeting, where we focus on revenue trends, costs, margins, and profitability. We end the day meeting with our sales team to discuss private event inquiries and opportunities for that week and month.

Any bar or restaurant plans today, tonight, this weekend?
My go-to spot is AZ, a hidden speakeasy at the Biltmore Hotel. I also love going to the Champagne Bar at The Surf Club or The Living Room at Faena. My drink is almost always a smoky old fashioned.

How about a little leisure or culture?
Beach and training, that’s my reset. Time by the water gives me perspective and clears my head. A good workout keeps me disciplined and sharp.

Any weekend getaways?
I usually like staycations in Miami Beach at either the Ritz-Carlton South Beach or The Miami Beach EDITION. I love stopping by Rao’s for dinner.

What was your last great vacation?
With my two sons, to California. We rented a house on the beach in Malibu. Mornings started with coffee and the sound of waves, and afternoons were spent in the water and relaxing. The sunsets and views were unreal. The best part is making memories with my kids. As much as I love building restaurants, these are the moments that truly matter.

What’s a recent big-ticket purchase you love?
I’m building a house in Coral Gables that I’m designing just how I want it.

With white brick walls, natural light, and soft, neutral tones, Nofar Method feels more like a boutique hotel than a Pilates studio. But don’t let the calming aesthetic fool you: the workout is not to be taken lightly. The South Beach studio (by way of New York) brings a refreshing mix of approachability and precision, thanks in part to the warm, no-nonsense energy of founder Nofar Hagag and her team.

We arrive at the restaurant around 1130a; everything is nice and quiet. The only person around is the prep cook, who’s been cooking since 9. We’re always playing live jazz — Sinatra is my favorite! My husband Massimo handles inventory and incoming reservations while I fire up the kitchen and oven and start cooking. The restaurant starts to smell like home.

The rest of the team arrives according to their schedule. We share a few words, always have coffee, and then each of us is starting the line. We laugh, taste, talk about the upcoming service and specials. At 5p the restaurant is ready, Massimo and I kiss and wish each other good service, and then the party begins.

What’s on the agenda for today?
We’re a couple that also works together, so basically, it’s a routine inside a routine. You could say that what we do is boring as we’re repeating each day over and over again. We cook, serve, clean, and repeat, but we love what we do. Nothing brings us more joy than the happy faces of our guests when they are eating at our restaurant. Each dish’s inspirations come from a piece of Italy, from arts to poets, classic literature, a regional landscape, the colors of the season, an old song, our childhood favorite things to eat, a smell that reminds us of our family and the time spent together.

Any bar or restaurant plans today, tonight, this weekend?
When we have the chance to go out, we prefer places where it’s easy to go without reservations, because we can decide at the very last minute. Hillstone in Coral Gables is our go-to. We often sit at the bar, chat with Javi (the bartender), eat the pressed sushi, the smoked salmon, and the pork chop; usually we order a bottle of Far Niente Chardonnay. We always go home happy and sleep like babies.

How about a little leisure or culture?
Our day off is normally Monday. We like to go to the beach. A recent Monday that we did something more “city” was the Dolce & Gabbana exhibit at ICA in the Design District. It was mesmerizing, a feast for the eyes. We felt full of beauty.

Any weekend getaways?
Palm Beach. It’s quaint and relaxed, never crowded. Getting old makes you choose places where time stops. We can breathe, take time for ourselves, and recharge. We stay at White Elephant, a charming small hotel that has beach service. We can stay until late, no rush, just us to enjoy the sunset, and smell the ocean. Back to the hotel, ready for dinner at La Goulue, our favorite French restaurant, oyster and foie gras our usual order.

We also love Destin and Alys Beach, North Florida. It’s a 10-hour drive from Miami, but we love catching up and talking during the drive, and for us, it’s paradise. Our favorite hotel is Henderson Beach Resort on the whitest beach that you can imagine, and eating at The Citizen (especially their oysters). Even if it’s just a few days away, it’s a great way to recharge our batteries, come back stronger, and ready to push the best flavors possible, with excellent service and beautifully plated dishes.

What was your last great vacation?
Maui. The sunset ceremony during aperitivo time at The Ritz-Carlton is breathtaking. It was the most spiritual and grounding trip we have ever done together. The Ritz where we stayed was supposed to be built next to the ocean, but during the excavation for the construction, they found a warrior’s cemetery, so it’s been declared a sacred land — and the hotel was built on the hill overlooking it. The ceremony to salute the day and honor the ancestors is really magical. We also enjoyed the mai tais and crispy tuna tartare, of course!

What’s a recent big-ticket purchase you love?
Our Italian dome pizza oven! We named it Luigi; he’s the best, and really handsome!

What was your last great vacation?
Maui. The sunset ceremony during aperitivo time at The Ritz-Carlton is breathtaking. It was the most spiritual and grounding trip we have ever done together. The Ritz where we stayed was supposed to be built next to the ocean, but during the excavation for the construction, they found a warrior’s cemetery, so it’s been declared a sacred land — and the hotel was built on the hill overlooking it. The ceremony to salute the day and honor the ancestors is really magical. We also enjoyed the mai tais and crispy tuna tartare, of course!

What’s a recent big-ticket purchase you love?
Our Italian dome pizza oven! We named it Luigi; he’s the best, and really handsome!
