It’s Thursday morning. What’s the scene at your workplace?
Thursday morning is not something I try to control or predict. One of my goals is not to imagine in advance what will happen, but to wait for the moment to come alive, and to trust myself to be fully inside it. Only the moment exists. Everything else dissolves.

In Miami, I arrive without expectations. Suddenly, there is a surprise: something is different. My brain tries to calculate, but I prefer to respond instinctively, searching for a kind of “virginity” in myself, a fresh way of seeing.

In Tel Aviv, at my restaurants HaSalon, Miznon and others, it’s very different. The last years have been about holding everything together and rebuilding: creating new concepts, opening new places, and giving people hope. I’m speaking with hundreds of team members, reshaping menus, reconstructing what has fallen, and trying to bring light. Thinking leads, but action must follow.

What’s on the agenda for today?
Today is about preparing for the grand opening of Naked Tomato at Moxy South Beach — our newest concept here in Miami — and staying fully present inside that energy. Tonight is our opening party, and I’m excited to celebrate with Miami. We’re making changes to the menu in the moment. I don’t like to arrive with fixed ideas. I prefer to see, to feel, and then respond, adjusting the menu instinctively, shaping it in real time. That last-minute movement is where the creation becomes alive.

At Naked Tomato, I’m thinking a lot about skewers as a form of art, each piece carrying a different story, a different flavor, and only when you finish the skewer does the full story become complete. We are evolving what those stories are, and I hope to have a more complete story by this evening.

Any bar or restaurant plans today, tonight, this weekend?
I love to walk and discover places without a plan. In Miami, I really love the traditional Cuban restaurants, and eating dishes such as black beans, or tamales. Puerto Sagua in South Beach is a favorite. These kinds of restaurants create an energy, where I get the feeling that it’s a place of freedom and ease. While I’m here, I’ll also spend time at Bella, our Italian concept that’s also in South Beach, which we opened earlier this year, to see how the team has translated the vision.

Any weekend getaways?
West Palm Beach is very meaningful to me because of Malka, our kosher restaurant we opened a little over a year ago. It’s a place I miss, not just for its beauty, but for the fire. The open fire, the charcoal, the burning wood: it creates something alive.

What was your last great vacation?
At the beginning of winter, I went to my small house in northern Tuscany. It’s more than 600 years old. We renovated it, but it still feels ancient, almost unreal. You hear nothing except the sound of water, like standing next to Niagara Falls.

This past year, a large rock fell from the cliff and blocked the path to the house, so it became unreachable. When I realized this, I told my wife, “Let’s go to Venice.” She had never been. We arrived during a storm. The water, the wind — it was wild, but beautiful. We went to Harry’s Bar, something very timeless, very simple. Sometimes these unexpected changes become the most meaningful journeys.

What’s a recent big-ticket purchase you love?
I recently purchased the Leica M6 film camera. I’ve always loved Leica as a brand for the quality, the history, and the precision. There is nothing quite like it. I had my eye on the M6 for many years, but I was never generous with myself. Last week, I decided to change that and allow myself to indulge. What makes it special is the way it teaches you to see. You have to train your brain to work manually, to be patient, to be precise, and in doing so, you begin to tell stories in a new way.

Thursdays are my meeting-heavy days, and they start early to catch the sunrise. Coffee with my wife and business partner, Madalina, is a non-negotiable. It’s so important to set the tone for the day before the noise starts. After that, I take a quick walk to clear my head, then, I’m in a 9a weekly working session with our marketing team. We’re a lean, founder-led company with a remote team, so my mornings are structured and collaborative, while afternoons are more fluid and meant for time in the kitchen.

What’s on the agenda for today?
Today is a blend of creative and operator mode. We’re rolling out updated packaging for Kaizen as we expand deeper into retail, making it clear at the shelf what truly differentiates us as the highest-protein, lowest-carb pasta, rice, and mac and cheese. At the same time, I’m filming a new protein-forward dessert for my page. I’m obsessive about bridging taste and nutrition. The goal is always the same: food that performs nutritionally but still feels indulgent.

Any bar or restaurant plans today, tonight, this weekend?
We love sitting in the courtyard at Mandolin Aegean Bistro in the Design District for something Mediterranean and vibrant. Plus, the vibe is just exceptional. It feels like a great community.

We just discovered Yamashiro, where we enjoyed some of the best sushi and steak we’ve had in the city, all in a beautiful rooftop setting. We also love Ceviche 105 in South Beach and Basque food at Edan Bistro in North Miami. And a hidden gem for Ceviche is Barra Callao tucked into a strip mall in North Miami Beach.

How about a little leisure or culture?
Madalina and I have been talking about going back to Vizcaya Museum & Gardens this weekend. We went about a month ago and loved it, but we went towards the end of the day and somewhat rushed it. I’d like to go back, take our time, walk the grounds slowly, and actually unplug for a few hours. A secret spot we’ve enjoyed just unwinding at is The Kampong in Coconut Grove.

What’s a recent big-ticket purchase you love?
Hiring an AI coach. As both a creator and consumer packaged goods co-founder, I’m beginning to understand that leveraging AI and integrating it into what I do day to day isn’t optional anymore. I wanted to go beyond surface-level experimentation and understand how to build systems around it so I can operate more efficiently and ultimately serve my community at a higher level. It’s taking some adjustment, but I’m already learning a ton.

What store or service do you always recommend?
Thrive Market. I’m a foodie, and I love discovering new and emerging healthy food brands. It’s one of the strongest platforms for better-for-you CPG brands and a great way to discover emerging food companies, including Kaizen.

Where are you donating your time or money?

Dogs have played a meaningful role in my life, and spending time supporting rescues and animals in need of forever homes feels like a natural place to give back.

It’s Thursday morning. What’s the scene at your workplace?
My mornings always begin with emails. I don’t keep any unread messages in my inbox — I take the time to answer everything right away. Part of that routine also includes signing petitions for animals, which is very close to my heart. From there, my day depends on what’s on my plate. It could mean sketching new designs, composing music, speaking with clients, or coordinating with colleges or sports teams on merchandise projects. Other days it’s rehearsal, planning shows, hiring musicians, or managing productions. I might be in a board meeting with the Florida Grand Opera or Leap for Ladies, working through goals for the upcoming season and planning next year’s initiatives.

What’s on the agenda for today?
Today, I’m flying back from Los Angeles after successful meetings there. On the plane, I’ll be editing my book, Life is a Bridge Trilogy.

Any bar or restaurant plans today, tonight, this weekend?
I’m the kind of person who goes to the same places all the time. I sit at the same table, I order the same thing. I like when people know me. I don’t like to change much; that’s just who I am.

Since I’m vegan, one of my go-to spots is Bellini in Coconut Grove. I recently joined the club at The Moore in the Design District. I also like ZZ’s Club over there. All of those restaurants, they know how to accommodate vegans, vegetarians, pescatarians; they figure it out. The chefs are very flexible to make alterations to a person’s needs.

How about a little leisure or culture?
I’m very fortunate to have so much culture around me. I’m always involved with the Florida Grand Opera, the Arsht Center, and the Frost School of Music at the University of Miami. And of course, every December we have Art Basel.

What was your last great vacation?
I don’t really take vacations. I love to mix pleasure with work, so Los Angeles and New York are always great places for me. There’s always plenty of work happening, but at the same time, I get to see my friends and enjoy the laughter and moments we’ve shared throughout the years.

What store or service do you always recommend?
It’s very important for me to stay healthy. I love getting acupuncture and massages, and Holly Nobil is one of my favorite people for health upkeep. I also use Body Method Studio for assisted stretching. It helps me stay in shape. On top of that, I work with my choreographer, Dawn Price. We do a lot of dance classes together, which I really enjoy.

Bordeaux isn’t a wine region I typically gravitate towards, though this decade-old bottling from Château Lagrange had me completely rethinking my avoidance. One of the best things about wine is its ability to change your mind and prove you wrong, which is exactly what happened upon popping the cork on this bottle.

Château Lagrange is a Third Growth (​​Troisièmes Cru) estate in Saint-Julien, the smallest of the Médoc’s four appellations. The property’s rich viticultural heritage dates back to the 16th century, though its recent history is where things get interesting. Since 2006, Matthieu Bordes has been at the helm of the estate, bringing great advances to its viticulture and vinification. All 118 hectares of the property are HVE (high environmental value) Level 3 certified, and biodynamic principles have been implemented on a small section of the property since 2008. In the cellar, Bordes favors a plot-by-plot method of vinification, meaning 103 areas are harvested and fermented separately so as to adapt to the needs of each parcel.

On a recent night at home, craving something with a bit more oomph than my regular rotation pinot noirs and nebbiolos, I pulled the cork on this bottle. The wine was everything I was looking for: smooth and fruit-forward, while showing initial signs of complexity after 10 years in bottle. Above all, the wine reminded me of the immense value found in secondary bottlings from top estates, and moreover, that the occasional push past one’s comfort zone generally yields rewarding surprises. I’ll be restocking a few bottles in my wine fridge to check in on over the next few years. –Vicki Denig
